Located in the province of Pisa, in the village of Pastina in the Val di Fine, La Ghiraia is a farmhouse that produces mainly Tuscan wheat and oil.
La Ghiraia Agricultural Farm operates in controlled agriculture, that is, it applies the guidelines of integrated agriculture in cultivations: respect for the territory, use of organic fertilizers, low environmental impact.
The durum wheat semolina with which Pasta Bertoli is produced is selected among the best crops, bronze drawn, processed at very low temperatures and slowly dried.
This allows to preserve the nutritional values and the taste of Tuscan wheat.
Curiosity: the name "Ghiraia" indicates the dormouse burrow, "ghiro" in Italian language.

Extruded through bronze, processed at very low temperatures and slowly dried, these are the scrupulous processes that give our pasta an absolutely natural consistency, making it tasty and full of flavor, as well as excellent digestibility, preserving the precious biological nutritional values of good durum wheat of Tuscany.
