Cavallucci are typical tuscan sweets of irregular appearance, because they are hand-made entirely in handicraft.
They are mainly composed of honey, sugar, flour, nuts, and strengthened with spices.
They can be soaked in liqueur wines.

The existence of this sweet biscuit is attested in Tuscany since 1200 with the name "biricuocoli" or "bellicuocoli", "bericoccola" or apricot, which is the form given to them.
The original dough consisted of honey, sugar and spices. Then the nuts and, in some cases, the candies were added.
Already known at the Medici Court, these biscuits around the 1500s were spread in osterias and "Poste", stations along the streets where the horses stood and changed.
This delicious mixture of honey, spices and nuts today lends itself to serving accompanied by liqueur wines.
In Tuscany, as with Cantuccini, the cookies are eaten after having soaked them in Vin Santo.
