I tried a recipe by Marco Bianchi, who always has interesting ideas: that of the chocolate fruit cake with mashed apples.
A cake rich in bitter chocolate and that is perfect for those who do not like too sweet flavors. In fact, this cake maintains the intense taste of bitter cocoa, softened just by apple purée.
Grate the peel of a lemon into a pot and then squeeze it half, being careful to filter the juice so that there are no seeds. Then peel the apples into wedges, put them in the pot, along with 4 tablespoons of sugar and 3 of honey (sweeten according to your taste, keeping in mind that the cake will not be very sweet). Put water to about half the contents, cook for 15 minutes until the apples are very soft. Blend with immersion minipimer. Let it cool.
In a bowl, whisk the milk with apple vinegar quickly and after 2 minutes add oil, vanilla and mash previously prepared. Always blending quickly add flour, sugar, cocoa, yeast, salt.
Bake 40 minutes at 180 degrees. However, check the cooking using a toothpick.
PS: I used the flour "Type 1" and I have to say that I actually noticed that it is mixed very well without creating lumps, which has a great taste and the quality is really remarkable. From now on I will always use this!
