The Wurstel is a cooked sausage made with pork typical of the German-speaking countries: "wurst" in fact means sausage.
The sausages of Tradizione Salumi are not made with pork waste, but are produced with selected meats parts.
To make wurstel Tradizioni Salumi grinds very cold meat and mixes it with spices and cold water. The dough is then bagged into natural casing (the same as the sausage) wrapped by hand to form about 20 sausages.
The wurstel are put to boil in water at 80 degrees. Once cooked they undergo the rapid cooling process.
