It is obtained from shoulder and trimmings of ham and neck of the pig, with the addition of fat cubes. The meat is prepared with salt, black pepper and spices and alchermes, a sweet red liquor.
This homogeneous dough is stuffed into natural casings and stewed in special rooms for about 3 days.
