The meat is kneaded and bagged in jute bags and hung in cold storage to quickly lower the temperature.
The soppressata is one of the characteristic ingredients of the Tuscan antipasto, but it is also used to stuff sandwiches, and in salads with raw vegetables such as fennel, carrots, celery and lemon.
Consumption at room temperature is recommended.
