About 350 g (handcut with a knife) vaccum pack of Loin Suino Nero Macchiaiola Maremmana, a breed recovered recently from extinction and bred by only two Tuscan companies in Italy.
This product is shipped on Monday or Tuesday.
The loin is a cured meat typical of the peasant tradition, obtained from boned pork loin and seasoned with wild fennel, and has a beautiful bright red color.
It differs from the neck for the total absence of veins of fat. The aroma is unmistakable, delicate and slightly spicy, while the flavor, enhanced by Vinsanto, is savory and balanced, thanks to the compactness typical of lean meats.
It is excellent tasted with rocket and parmesan flakes, or in combination with cheeses and vegetables.
