Arista in lard

The arista (loin of pork) is a cut of the pig that is obtained from the loin. The loin is boned and flavored with spices and flavors: salt, pepper, garlic, lemon zest and rosemary. The meat is then rolled up and left to rest for a few hours. The cooking is done in a tub with lard.

You can eat it both cold and warm. It can be kept in a jar covered with seed oil.
