Packaging: about 1,4 g vacuum-packed or 2,8 kg whole. The weight may undergo slight oscillations for the handmade cut of the product.
This product is shipped on Monday or Tuesday.
The shoulder is obtained from the central part of the pork shoulder and can be divided into two pulps after aging. The salting is done by hand with coarse sea salt, removed with lukewarm water after about twenty days. It is then seasoned in special rooms for 5-6 months, coated with a mixture of suet and peppered. Finally it is steamed.
The meat has an intense flavor that reminds us of semi-sweet ham, with the difference of being much more tasty and fatty.
The steaming of the shoulder makes this product unique and innovative in the panorama of cured meats.
