Colfiorito Plateau Lentils
On this beautiful Umbrian plateau of Colfiorito, in the Regional Natural Park, one of the oldest Italian crops is grown: the lentil.
The particular conformation of the soil of this area, a lake with marshy features, transmits to these lentils the qualitative characteristics that place them among the best in Italy.
Colfiorito's lentil variety has a small size, with colors ranging from brownish to green; they are rich in protein and the iron they contain is a valuable aid in diets for Mediterranean anemia.
Usage: soaking is not necessary. The cooking time is about 30-40 minutes. You can cook them alone, with oil and onion or leek, or with tomato, or you can prepare tasty soups also using other legumes.
Wine: a good rosé wine as fresh as Vin Ruspo di Capezzana.
Curiosity: in Italy the lentils represent a wish of wealth, and for this reason in the culinary tradition they are a dish that never fails in the dinner of the last day of the year.
