This homemade mustard, made with green tomatoes and Vin Santo, has a flavor that goes perfectly with savory food.
You can taste the chutney with very savory cheese, bot aged cheese or soft cheese such as gorgonzola or taleggio.
This chutney is made with green tomatoes, not ripe yet. The tomatoes are pulped with lemon, sugar and vinsanto. The cooking is quit slow and goes at length, beacuse it is necessary to wait for the tomatoes to be almost candied.
We suggest to taste the chutney with cheeses. Bothe aged cheeses or soft cheeses, such as taleggio and gorgonzola.
