Vinsanto of Chianti made with Trebbiano and Malvasia Bianca grapes, kept to dry for a few months.
Then the grapes are squeezed and the must is aged in chestnut barrels for three years, as per centuries-old Tuscan tradition.
At the end of aging, the Vin Santo that comes out of a caratello is about half of the initial must.
