The olives are harvested by hand, so as to keep their organoleptic properties intact, and the use specific equipment allows not to use herbicides.
The 'classic' version has a fruity and light, harmonious, herbaceous and fresh flavor. The olives used come from most of the Poggiolino olive grove. Among these the native variety 'Frantoiano di Montemurlo'.
Olfactory and gustatory characteristics: it has light fruity tones with clear references to the artichoke; the taste is enveloping and soft, has good fluidity and balance; fragrant and homogeneous, it has strong notes of sweet and spicy nuances, in closing you can appreciate the freshly aged almond and the pine nut for an elegant touch on traditional dishes.
