Italian Carnaroli rice and black summer truffle

Carnaroli rice and black summer truffle (Tuber Aestivum Vitt., 1%) mixed to prepare the Italian risotto with truffles.

Use: Melt a knob of butter in a saucepan, pour the rice and toast it for about one minute. Add half a glass of white wine and let it evaporate, cover the rice with hot broth and turn from time to time, for about 18 minutes. If necessary, add broth during cooking.
