Typical Apulian pasta made from durum wheat and burnt wheat semolina, with the characteristic shape of a small, thinner dome in the center and with a rough surface.

Orecchiette are one of the most typical products of Puglia. The shape, which is reminiscent of small ears, is derived from the pressure of the thumb in the center of the small disc of dough, and is made exclusively with durum wheat flour, water and salt.
The perfect combination of orecchiette is with turnip greens: it is perhaps the most characteristic and well-known dish of Puglia.
The burnt wheat (grano arso) is another typical product of the area, born in the kitchen to recover the grains from the ears left after the harvest: the stubble was burned and the burnt grains remained. The flour produced was combined with normal flour and used to prepare bread, pasta, taralli, focaccia and baked goods.
Today, burnt wheat is produced simply by roasting the grain: the flour is whole and has a lower gluten content.

Orecchiette with turnip greens sauce (for 4 people): 500 g of orecchiette, turnip greens sauce, salt. Cook the orecchiette in salted water. When cooked, drain and add the turnip greens sauce. Mix everything and serve with a little EVO oil.
