The Cavatellucci, or cavatelli, are a typical Apulian and Molise pasta. They are made with durum wheat semolina and water and have an elongated shape and a hollow towards the inside. The shape is given by hand, crushing and rolling a small piece of pasta with fingers.

Cavatellucci with rocket salad and sundried tomato pesto (for 4 people): 400 g of cavatellucci, rocket salad and sun dried tomato pesto, extra-virgin olive oil, salt. Cook the cavatelli pasta in salted water, drain and add the pesto. Mix well and serve with a little EVO oil.
