Acquacotta is a typical Tuscan dishes based on vegetables, especially onions and beetroot. Prepare by adding an entire egg while warming up.

Acquacotta (literally "cooked water") is one of those typical Tuscan dishes, especially in the area of the Maremma Grossetana.
It is born as a poor dish, made with the vegetables available at the time and usually with onion prevalence. It was consumed by adding to the soup an entire egg and stale bread. The Macchie Alte Acquacotta is made exclusively with ingredients produced in the organic farm itself.
Use: prepare it by heating it in a large frying pan and adding an entire egg per person, without stirring. It is then poured into a base dish with a base of shredded bread or the day before and ends with an extra-virgin olive oil and Parmesan cheese or grated pecorino cheese.
