Chicken gizzards are part of the digestive system of the chicken and are used to "grind" food. They have a rather solid consistency (in Italian they are called "durelli", that is "a little firm"), and can be cooked in many different ways.
Here they are prepared with tomato and peas, with a small addition of meat pork for a very tasty ready-made dish.
The gizzards are part of the "fifth quarter", a part of the animal once considered "poor" and less valuable than the quarters (the two front and two rear). Offal and internal organs of a butchered animal were normally used in the kitchen, stewed, broth or fried.
From a nutritional point of view, the fifth quarter is a food rich in proteins, vitamins and minerals and today, due to its difficult availability, it has become a gourmet and street food product.
Use: pour the product in a pan and heat over low heat; if you use the microwave, heat until boiling.
