The Agresto is a spicy condiment already used in Roman times, also known in the Middle Ages and the Renaissance.
Today few companies, mainly concentrated in the San Miniato area (Pisa), produce this condiment, so much so that the Tuscany Region has named the agrsto Traditional Agri-food Product (PAT). Even the Puro Carmignano farm, located on the hills between Florence, Prato and Pistoia, wanted to bring back the recipe of the past.
Organoleptic characteristics of the agresto: the taste of the agresto is acidic because the grapes are picked unripe, around the month of July. The grape must is then cooked by adding vinegar, honey, onion, garlic and spices. The density is similar to that of balsamic vinegar, the color is a beautiful dark red with warm tones. The scent is complex and the contrast between the sweet and the acidulous makes the seasoning interesting not only for salads, but also as an ingredient in the kitchen for meat and fish.
